I have worked in restaurants for most of my life and I have always defined Surf & Turf as a steak and seafood entree. The steak can be any steak the seafood can be of any kind. I have seen nearly every combination. My favorite Surf & Turf is a classic.
8oz Filet Mignon with Bearnaise Sauce with a Grilled or Broiled Lobster tail accompanied by some asparagus or corn on the cob and a baked potato with sour cream and butter. Anything that looks like the picture above or below would satisfy my definition of a Surf & Turf but each restaurant and each diner will have their own preferential definition and meat plus seafood combination.
Here in Qualicum Beach most places that offer Surf and Turf provide Steak and Shrimp. In fact my favourite meal is the Surf and Turf offered at Qualicum Beach Memorial Golf Course - On tuesdays in the summer it's on for $14 and it's crazy tasty.
Lobster and steak. More generically, any seafood and steak. Whether it's a filet of fish, or shrimp, or crab.
But if someone just says "Surf & Turf", in my mind, it's Lobster.
